

Keeping with our April theme of healthy snacks, these tangy exotic bliss balls make a refreshing change from traditional cacao-based treats.
A special ingredient is the coconut butter, it gives a smooth coconut texture, without the grit of too much desiccated coconut. The coconut oil binds it all.
Make them ahead of time and enjoy whenever you crave something sweet.
These are dairy-free, gluten-free and vegan.
Ingredients
2C ground raw cashews
1/2C dessicated coconut
1/2C coconut butter
2Tbsp softened coconut oil
1/4C maple syrup
1Tbsp vanilla essence
Juice and zest of one lemon
Pinch of salt
1T ground cardamom and 1C desiccated coconut to decorate
- Grind cashews to a fine powder.
- Combine all ingredients in a food processor until a firm dough forms.
- Form into small balls and roll each one in ground cardamom and desiccated coconut mixture.
- Chill for at least an hour in freezer. Store in freezer.
